Car Themed Cupcakes!

My awesome little brother graduated college on Friday!!! I couldn't be more proud of him! He's worked SO SO SO SOOO hard to get where he is!! He's basically awesome. Anyone reading who's in need of a mechanic, let me know! He might be able to help! :]

TO celebrate his graduation, I decided to make him some "car" themed cupcakes!

I was short on time, so I didn't make everything from scratch, but who cares? LOL! Basically buy a box of cake mix and follow the directions on the back. Then use your creativity to make it pretty!

I usually "doctor" up cake box mixes a bit. I used applesauce for the oil, and in this particular cake, I added a bit of almond extract and some vanilla.

Here we have our list of ingredients:


Dump your box of cake mix into a big bowl:


Add all of your wet ingredients (oil, water, eggs). I actually added a 1.5 teaspoons of almond extract to mine...


Blend away.


There we go! Nice and smooth.


Divide batter into 3 bowls and add your food colering. I use the Wilton Colored Gels, but whatever you have on hand is fine I'm sure.


Fill your cupcake liners by laying color over color until they're 2/3rds full.




Fresh from the oven!!!




Split your frosting into 3 bowls.


Put in your food coloring and mix well.


Add your frosting to your handy-dandy frosting gun!


Frost away!!! This thing makes it MUCH easier!

I was very happy with how they turned out! They were so moist (thank you applesauce gods) and flavorful!! They got eaten rather quickly too, so that's another good sign :]
